Vegan Mashed Potatoes


Vegan mashed potatoes is a delicious vegetarian recipe. It has lot of flavors due to its fresh ingredients. These are so tasty that you might want to eat it without any curry. Vegan mashed potatoes can be combined with any vegetarian curry of your choice.

Vegan mashed potatoes become watery on adding more water. So you can experiment by adding milk to your mashed potatoes to make it much tastier. Virgin oil and soy milk cream also enhances flavor of this recipe. Vegan mashed potato can be used with several variation depending upon your choice.

Ingredients:

To make Vegan mashed potatoes you need to bring following ingredients from a nearby mart.

Four pounds of potatoes peel these potatoes and then chop it.
Drinking water
One teaspoon of salt
2 tablespoon of virgin olive oil
Half yellow onion
Half red onion
Two minced cloves
Two minced garlic
One-fourth cup of finely chopped green onion
One tablespoon of finely chopped fresh rosemary
Two tablespoon of finely chopped fresh basil leaves
Half cup of soy milk
Half cup of milk
Half cup of vegan margarine
Three tablespoon of nutritional yeast
Three tablespoon of chopped fresh parsley
salt as per your taste
Pepper as much you like



Method:

To make delicious vegan mashed potatoes, you need to follow these steps carefully.

1. Take a large soup pot.
2. Add water in the pot.
3. Wash potatoes well in clean water.
4. Remove the skin of potatoes.
5. Chop the potatoes.
6. Add potatoes in such a way that, potatoes are completely covered by water.
7. Now, add one teaspoon of salt in it.
8. Keep the pot on high flame, and bring it to boil.
9. When water starts boiling, reduce the flame to medium high and cook for thirty minutes.
10. After thirty minutes, drain remaining water.
11. Cool down the potatoes.
12. Take a pan.
13. Add olive oil in the pan.
14. Saute red onion, yellow onion, green onion and garlic for three to five minutes or until onions become soft.
15. Reduce heat to simmer.
16. Add rosemary and basil leaves in the pan.
17. Cook for sixty seconds.
18. Remove the pan after a minute.
19. Now add onions, garlic, soy milk, milk vegan margarine and yeast to potatoes.
20. Mash potatoes until it reaches the expected consistency.
21. If it is not reaching desired consistency, you can add a bit more liquid to the potatoes.
22. Now add fresh parsley.
23. Mix it well.
24. Season Vegan mashed potatoes with salt and pepper as per your taste.

You can serve vegan mashed potatoes with any of your favorite vegetarian curry. Try sweet roasted garlic paste instead of  olive oil in this recipe, and enjoy the amazing  flavor.  You can also use two tbsp. of finely chopped chives in place of flat leaf of Italian parsley. Though you can use any potato but experiment this recipe with russet potatoes.
