• Two tbsp. of Canola oil
• One and a half cups of yellow onions finely chopped
• One cup of finely chopped red bell peppers
• Two tablespoons of finely chopped garlic
• Two to three Serrano peppers
• One medium zucchini, chopped into small dice
• Two cups of fresh corn kernels
• One and half pounds of mushrooms cut into cubes
• Two tbsp. of red chili powder
• One tbsp. of ground cumin
• Salt as per your taste
• One-fourth tsp. of cayenne
• Four large tomatoes
• Three cups cooked black beans
• One or fifteen ounce of canned tomato sauce
• One cup vegetable stock
• One-fourth cup of fresh cilantro leaves and finely chop them
For Garnish
• Shredded cheese
• Finely Chopped cilantro
• Sour cream
• Lime wedges
Method:
To make best vegetarian chili at home, follow these easy steps carefully
• Take a large size pot and heat oil over medium high flame.
• Now add ingredients such as onions, bell peppers, chopped garlic and Serrano pepper.
• Now cook and stirring occasionally until it become soft. This will take around three minutes.
• When vegetables give away their juice and their color changes to brown, add chili powder, cumin seeds, salt as per your taste, and cayenne and cook about thirty seconds.
• Now add beans, tomato sauce, and vegetable stock and stir it well.
• Bring boil in it.
• When boil comes, then reduce the flame to simmer and stir it occasionally for about twenty minutes.
• After twenty minutes remove it from flame and adjust the seasoning as per your taste.
• Serve best vegetarian chili in bowl.
• Garnish each of the serving with shredded cheese, cilantro, sour cream, and a lime wedge.
• You can make six to eight servings.
You can serve it in two different ways. To make your recipe interesting you can combine it with Frito and melted cheese or garnish it on top of pasta, making your pasta spicier.
